Why is beef only sold in the spring? 
Think about this for a minute. If you're wanting "grass-fed" meats, you want that animal to finish on the best grass available. In North Alabama, our best and the most nutritionally dense grass is our spring grass. If you're buying your beef during our hot, dry summers when our grasses have the food value of cardboard, or during the winter when most grass is dormant, it will be reflected in the taste, value and texture of the meat. You might ought to think about this.

Why do you only sell beef by the quarters, halves and wholes ? 
One of the things we must do is to limit those activities that distract us from raising the best beef possible: Nurturing our soil, focusing on our grass growth and tending to our animals.

If we were to sell our beef by the cut, we would have to operate a store to do that. Retail sales are a completely different activity than raising animals. When you step back and look at this from an analytical point of view, you do not want the farmer who is raising your meats to be distracted from doing what is necessary to produce the absolute very best? Anything short of the best is simply not acceptable. We are very protective of the amount of time we spend in any activity that will distract us from producing the very best.

Why is your beef more expensive than what is at the store or for that matter, other farmers? 
The short answer is that it is not more expensive! It’s just that all food is sold for exactly what it is worth! If you buy food based on its quality, nutritional value and taste – then, our meats are cheap. However, it goes much deeper than that. One of the reasons commercially produced foods are so cheap is because it is mass produced without any concern as to the quality of the food. Everything is done to produce quantity – not quality! Our focus is on quality. Thus, we spend a lot of time working toward this goal. Quality isn’t a cheap way to go. It requires a lot of labor to produce a system that will promote healthy growth in animals. We do not cut corners on anything that will achieve this end.
